Set in the charming village of Oranmore, Basilico restaurant serves up some of the best Italian cuisine to be found anywhere in Galway.
The restaurant, which recently celebrated its 10 year anniversary, is run by chefs Fabiano Mulas and Paolo Sabatini who launched the business in February 2008.
Valerie Woodlock of Basilico said the restaurant strives to offer customers an authentic Italian dining experience with a professional, friendly, service which offers both quality and affordability.
"Basilico wants to give our customers the most authentic Italian food experience," she said. "Italy as a country has varied cooking traditions from Rome, Tuscany, to Sardinia; every region is different. We like to feature all the regions if possible and represent them the best we can so our customers can have a true taste of Italy.
"We import our own wine from Calabria, tailor made for the tastes of our customers. Fabiano and Paolo travel to Italy on a regular basis looking for artisan producers and we import from them directly.
"We bought our farm this year and erected polytunnels so we will be starting our own production of home-grown vegetables. For us, it is important to ethically source our food because it enables us to guarantee the quality of food that we serve."
Mrs Woodlock believes one of the keys to Basilico's success is its refusal to rest on its laurels.
"The restaurant is constantly looking at what dishes are trending on the food scene in Italy. We change our menu on a 12 weekly and a seasonal basis. We will review what is selling and what is not too popular.
"Paying attention to our customers, observing what they like, and striking that perfect balance between gently introducing new dishes to our menu and keeping classic favourites has been key in our success."
