Love is in the air at SALT

There is less than one week to go to the most romantic day of the year and at SALT Restaurant & Bar at 163 Upper Salthill, love is most definitely in the air.

Head chef Jose Vega has been cooking up a storm in the kitchen as he puts the finishing touches on his menu for Valentine’s Day at SALT, while bar manager Mattie Cahill and his team have been creating some delightful cocktail recipes with which you are certain to fall in love.

The signature Valentine’s cocktail at SALT ahead of February 14 is called P(i )S(co ), I Love You. Sure to be a crowd pleaser, the cocktail contains Pisco (a Chilean/Peruvian spirit ), Grand Marnier, SALT-spiced cranberry cordial, fresh lemon juice and egg white and is garnished with dehydrated white rose petals and cranberry bitters.

True to form, Vega has also created a fabulous à la carte menu for Wednesday evening next, with nibbles on arrival for all guests. As a special treat, he has also promised that all the ladies will go home with a little taste of SALT.

As always, dinner will be served from 6pm to 10pm and lovebirds will have a choice of four starters including pan-fried seared scallops and confit duck leg. There is also a tasty smoked haddock fish cake on the menu and a mouth-watering vegetarian dish comprising asparagus, artichoke, quinoa, and pomegranate salad with raspberry dressing.

The starters will be followed by an entrée of pineapple and mango salsa with passionfruit jelly.

For the main course, there will be a choice of four dishes, as well as a seafood sharing dish for two. The individual dishes are pan-fried stone bass, beef wellington, and rack of lamb, as well as another superb vegetarian option comprising Fivemiletown goats’ cheese-stuffed courgette flower with wild garlic and smoked tomato sauce, olives, and Provençale Charlotte.

For dessert, you choose from strawberry and basil trifle; cardamom rice pudding with rose syrup and pistachio; chocolate macaroon with raspberry filling; or French toast with quince, pear, and warm Cashel Blue bon-bon.
