This tasty Mediterranean style salad recipe comes from food company Kylemore. The nuts, seeds, and olive oil provide lots of heart-healthy monounsaturates.
Ingredients
For caramel nuts:
20ml olive oil
100g cashew nuts
1 tbsp caster sugar
Freshly ground black pepper to taste
For citrus and poppy seed salad dressing:
45 ml olive oil
45ml fresh orange juice
158ml lemon juice
1 tsp honey
45g poppy seeds
Freshly ground black pepper to taste
For the salad:
120g mixed salad leaves
2 sprigs of fresh dill
2 tomatoes, diced
Half a cucumber, diced
2 fresh mangoes
2 smoked chicken breast fillets, sliced
Method
Caramel nuts:
1. Cover the bottom of a non-stick pan with olive oil and heat.
2. Sprinkle nuts to cover base.
3. Stir-fry continuously until nuts are warmed through.
4. Sprinkle with castor sugar and stir-fry until the sugar has melted and begins to caramelise. Turn nuts over into a sheet of grease proof paper.
5. Grind over black pepper. Leave to cool and break into pieces.
Citrus and poppy seed salad dressing:
1. Mix all the ingredients in a bowl.
Salad:
1. Tear salad leaves and arrange each serving on individual plates.
2. Peal the mangoes and cut with a sharp knife on either side of the stone and then into thin slices.
3. Arrange the chicken strips, mango slices, tomato and cucumber on the salad leaves and top with the dressing.
4. Sprinkle the caramel nuts.
5. Garnish with dill sprigs.
