Artisan Restaurant welcomes two new appointments and launches new summer menu

Winner of the Best Restaurant in Galway at The Restaurant Association Best in Ireland Awards, Artisan has welcomed two new additions to its award-winning team and launched a delicious new summer menu. Newly-appointed head chef Mark Campbell has put together a superb offering of culinary options guaranteed to suit all palettes.

Campbell has worked as Artisan’s sous chef for the past two years and has now stepped up to the plate and brought a selection of artistically designed dishes to Artisan for summer. Having trained in GMIT, the Ballinasloe native is excited about bringing what he has learned from working in restaurants across the world, including Sydney and Melbourne, to the restaurant. The summer menu options include a pan-seared scallop starter with Wicklow blue cheese, walnut risotto with calvados and apple oil, and fennel and celeriac Connemara crab tian with chilli and citrus jelly.

Artisan’s new menu boasts great variety, and other seafood options include the herb-crusted Atlantic hake fillet in a bacon pea and wilted green broth served with organic baby potatoes. In addition to the new food menu, Artisan has added new selections to its renowned fine wine list.

Artisan also welcomes Sara Jane Roest-Whittle as the new daytime manager to the restaurant. Having worked as a hostess in the Four Seasons Restaurant in Dublin, the Waterford native is looking forward to bringing some five-star service to Galway’s best restaurant.

Located in probably one of the best spots in the city, above the popular Ti Neachtain’s pub, Artisan’s windows look down on the charming medieval buildings of Quay Street and Cross Street and offer the perfect spot to while away a couple of hours while enjoying some of the best food in the city. Candlelight, soft sounds, and subdued lighting create the perfect atmosphere in which to enjoy the extraordinary culinary delights of this true foodie restaurant. Proprietor Matt Skeffington prides himself on serving exceptional French classic/Irish dishes with a twist, drawing inspiration from Parisian bistros.
