Delicious new developments in catering from Green Olive

It is often said that when one door closes, another one opens, and this certainly rings true for Jacinta and Val Lynam. After the couple were both made redundant by their former employer, they decided it was time to make the leap and start their own business. With Jacinta Lynam’s years of experience in the catering and hospitality industry as a general manager and Val’s passion and enthusiasm for food as a renowned head chef, they decided to merge their business and creative talents and launch an event catering company.

Starting with the construction of a brand new catering kitchen beside their home in Craughwell, which is both HSE approved and fully HACCP compliant, the Lynams’ vision quickly became a reality. Next to decide on was a name for their venture. For thousands of years, throughout human history, the olive and the olive branch have been universally recognised as the symbol of peace, prosperity, safety, and wellness found within a system or circumstance of balanced harmony — with this in mind, the name of the new business, Green Olive, was born.

Green Olive is different from other caterers. The Lynams are lucky enough to be based in the countryside, and over the past two years have grown much of their own produce, which means they have immediate access to fresh produce which is in season.

“We are a new company made up of passionate, conscientious, foodies,” said Jacinta Lynam. “Each menu is customised to an individual’s taste and budget, ranging from hot and cold buffets, barbecues, international cuisine, and appetisers to corporate and family designed gourmet multi course parties. We offer a full range of speciality menus including, but not limited to, French classical, Mexican, Italian cuisine, seafood, and vegetarian.”

There is an interesting and varied choice on the menus including delicious butter basted pig on a spit, baked salmon quiche and vegetable crumble. Desserts and salads are just as diverse. Prices start at €8.95 per person.
