The simple asparagus cooking mistake turning this seasonal favourite into a soggy mess

Asparagus season is in full swing and while plenty of households are looking to try new asparagus recipes before it loses its freshness, many are still getting it badly wrong in the kitchen.

From boiling it into a soggy mess to snapping off half the stalk before it even hits the pan, asparagus is one of the most commonly overcooked vegetables despite only needing a matter of minutes to shine.

According to Hannah Duxbury-Pardoe, Head of Culinary at meal-kit delivery service HelloFresh Ireland, the biggest mistake people make is treating asparagus like a vegetable that needs lots of time.

It cooks far quicker than people think

“People often overthink asparagus and end up cooking all the freshness out of it,” Hannah explains. “It should still have a little bite to it. If it’s floppy or dull green, it’s gone too far.”

One of the most common errors is boiling asparagus for too long. While many assume it needs the same treatment as broccoli or carrots, Hannah says a quick fry, roast or steam works much better.

“Asparagus cooks incredibly quickly,” she says. “In a hot pan, you’re looking at around three to five minutes, depending on thickness. Roasting is brilliant too because it brings out the natural sweetness.”

You’re throwing more away than they need to

Another mistake is throwing away too much of the vegetable before cooking. While the woody ends should be removed, Hannah says people often chop off far more than needed.

“The easiest trick is to bend the asparagus gently and let it naturally snap,” she says. “It breaks exactly where the tough part ends, so you don’t waste half of it.”

Leaving it loose in the fridge dries it out fast

Storage is another issue catching people out. Leaving asparagus loose in the fridge can quickly dry it out, making it limp before it’s even cooked.

“Holding it in a glass with a little water at the bottom can really help keep it fresh for longer,” Hannah explains. “Think of it like flowers in a vase.”

It doesn’t need much seasoning

Seasoning also makes a huge difference. While asparagus works well with simple ingredients, Hannah says too many strong flavours can overpower it.

“You don’t need much,” she says. “A bit of olive oil, salt, pepper and lemon is often all you need. Parmesan works beautifully too.”
