At the heart of Blackthorn’s kitchen is head chef Nathan Hindmarsh, who brings years of expertise and passion for using the best of local produce. His carefully curated menu will feature a combination of dishes cooked over a Mibrasa charcoal grill, an innovative method that infuses every bite with the rich, smoky flavours of a traditional cooking style. Blackthorn's signature Irish beef is aged on-site in a dedicated dry-aging unit for a minimum of 28 days, ensuring the utmost tenderness and flavour in every cut. With access to Galway’s abundance of fresh seafood from the Atlantic Ocean, diners can also enjoy an ever-changing selection of premium fish and shellfish, all caught locally to bring a true taste of the sea to your plate.

The restaurant’s newly refurbished dining space offers a warm and inviting atmosphere, bathed in beautiful natural light, thanks to its expansive windows and its perfect southwest-facing orientation. The carefully chosen furniture, including stunning natural oak tables sourced from local crafts people, enhances the intimate, yet modern charm that Blackthorn seeks to bring to the local dining experience.
