The Galway Ingredient

Take 10 very talented local chefs, add one Euro-toques organisation, mix in a dollop of creativity and generously sprinkle with passion, to create one very tasty and impressive pocket-sized recipe publication entitled The Galway Ingredient.

The Galway Ingredient is crammed full of mouth-watering recipes, each one carefully designed with delicious local produce in mind. Teagasc has kindly sponsored the book, which marks the milestone that is the Volvo Ocean Race stopover in Galway.

At the forefront of this wonderful project are chefs Gerry Galvin, who is the editor and former owner of the renowned Drimcong House Restaurant, Moycullen, Co Galway, and Michael O’Meara, responsible for all the stunning photography throughout the publication and owner of Oscars Bistro, Galway city.

The remaining, equally artistic chefs include Cliodhna Prendergast of Delphi Lodge, Leenane, Louis Smith, Senior chef/lecturer at GMIT, Alan Williams of Abalone Restaurant, Paddy McCooey of Cre Na Cille Restaurant, Tuam, Stefan Matz of Ashford Castle and the g hotel, Tim O’Sullivan of Renvyle House, Connemara, Ulrich Hoeche of the Connemara Coast Hotel, and Wade Murphy of Lisloughrey Lodge, Cong. The delectable recipes chosen for the book are indeed a testament to the hundreds of prestigious awards that this exceptional group have collectively been accredited with.

“Each of the contributors to The Galway Ingredient has worked exceptionally hard to ensure that the end result is something that, not only they, but that Galway can be proud of, and I believe they have surpassed all expectations” said Gerry Galvin. “Teagasc was our perfect partner for the project, which has enabled us to present food of the locality at its freshest and best” added Galvin.

Gerry Scully, programme manager – rural development, Teagasc, also expressed his pleasure on working with Euro-toques International, describing the organisation as “undisputed leaders in the promotion of best quality food and safeguarding culinary heritage”.
