Hyde Bar on Forster Street, rightly known as the home of gin in Galway city, has just increased its offering by bringing out its own gin. This is the second time the chic venue has created its own gin. The very limited batch was distilled and bottled by Clonakilty Distillery in County Cork. Clonakilty Distillery, like the Connacht Hospitality Group, is a family business, so this was a perfect partnership.
Hyde Gin is a blend of three different distillations using 13 botanicals and a whey alcohol spirit - a base gin distillation, a citrus distillation, and a lavender distillation. Three separate distillations were used to exact the maximum amount of flavour from each set of botanicals, and they were then blended at Hyde's maturation site to create a gin that would be best suited to cask maturation. The gin was matured for three months in a second fill European oak Bordeaux red wine cask, which the Hyde team had previously used to create a single cask whiskey expression.
It is these Bordeaux casks which add its beautiful pink hue as well as depth of flavour. Hyde Gin is a charming rounded and complex gin that is a real delight, and opens up vibrantly when consumed. Hyde Gin is best served with a chilled premium tonic and garnished with the citrus and pine notes of lemon and bay leaf.
Hyde Irish Gin is available exclusively in Hyde Bar, and with only 500 bottles in existence you can be sure that this batch will not be available for too long.
