I moved from England back in 1997 with my family and now live here with my husband Kieran (a Galway man! )

I first came to Galway to study Professional Cookery in the GMIT. I made my way through different hotels and restaurants, then had my heart set on opening up my own food truck. Being able to go to different places, meeting new people and spreading joy with food.

I saw there was a gap in the market for a traditional dish that in some parts of the country had been forgotten about, Boxty. Using my knowledge and experience with food I bought Boxty back to the modern day by fusing it with new cooking techniques to form the perfect lunchtime treat. I now have two types of Boxty on my menu which you will not get anywhere else.

My life took several turns in every direction, good and bad. Then I got the biggest break and best experience I will ever get. I entered The Taste Of Success in 2016 with a variation of the beef dish I sell in my food truck. I went on to win the competition that year and my product is still in Lidl to date, a year and a half down the line. This lead me to reinvent my food truck and now have a regular spot to trade from.

Galway has charm and character like no other. Anyone who visits feels welcome and always wants to return, me being a perfect example of that. I left to work in England and had to come back. I missed how every day is different, how Galway is constantly changing. Galway is the place where you make memories that last.
