Bursting with flavours and spices, this recipe is a healthy and quick alternative to the much-loved spice bag, and it could not be any simpler to make. To create this dish all you need is one red chilli, one red pepper, one onion, one chicken breast, and McDonnell’s spice bag seasoning mix. Cut the chicken breast into small thick slices. Create a batter to coat the chicken pieces in by mixing one egg, ¾ spice bag seasoning mix, and 4 tbsp flour. Cook the chicken strips for 35 minutes at 180 degrees. Chop up the pepper, onion, and chilli, and sauté on a pan until soft. Add to a bowl and mix with the chicken strips and remaining McDonnell’s spice bag seasoning. Et voila!

NeighbourFood launches in Baile na hAbhann

A new online farmers market launched this week in Connemara. Called NeighbourFood, this is a fresh new way to do your weekly shop. Its aim is to create a link between local producers and local people, and it will run every week at An Tulach in Baile na hAbhann, next door to TG4.

“NeighbourFood is a really easy way to get the best local produce and at the same time support local producers near you,” says chef Diarmuid Ó Mathúna, who will be running the market. “Each week members can place an order on neighbourfood.ie and then collect a basket full of goodies the following Wednesday evening.”
