Athrú 2016 inaugural conference to take place in Galway next week

Thu, Jul 14, 2016

Leading female chefs and restaurateurs from across Ireland are coming together in Galway next week for a culinary think-in and conference on gender roles within professional kitchens and throughout the hospitality sector. Athrú 2016, empowering women in the culinary arts in Ireland, is a two day conference and workshop with the goal of establishing a working Irish female chef database that would be available or suitable for judging, media, or to provide a female voice and point of view.

Athrú 2016 is attracting international female culinary heads such as Maria Canabal, president of Parabere Forum - Improving Gastronomy with women's vision. Speaking ahead of the Athrú 2016 Ms Canabal said: “Currently, it's obvious that women are under-represented in the food and hospitality industry. At the same time — and this might not be a coincidence — society has become increasingly distrustful of the food industry. Women's voices need to be heard and their talents deployed, so that we can boost confidence in the food sector, and construct a vision of the future based on values of sustainability and equal opportunity. If society, and the food and wine industry, is to evolve towards greater sustainability, greater equality, stronger growth, and increased social progress, women must be able to take their rightful place.”

John Keogh’s, it’s a keeper

Thu, Jul 07, 2016

To my mind, there are three levels of food in Irish pubs. At one end is the traditional pub, where your only dining decision is whether to have the cheese and onion or salt and vinegar. And then there is proper pub grub, comforting soups, tasty sandwiches, and old favourites like bangers and mash or lasagne, usually in overly generous portions. At the other extreme of the scale are the ones who take themselves very seriously, where you can expect such delights as 'roasted marrow bones with curried clams in a grilled octopus reduction'.

Let them eat cake

Thu, Jun 30, 2016

Schools around the country have just finished up for the summer holidays and many parents have been in a state of panic. This is not my first summer juggling working from home with looking after young children who would be in school during weekday mornings, giving me an opportunity to get some work done. As any parent knows, it is difficult to get anything done when young children are at home. They need to be entertained, looked after, and don't care for deadlines while you, on the other hand, just need to get the job done.

Oooh la, la — The importance of onions

Thu, Jun 23, 2016

Are you watching the football? France, the hosts are through to the last 16, and are looking good. When I think of France, I think of their favourite ingredient, onions. Onions are a much underrated ingredient in the kitchen, but are so important to our health and overall well-being, as well as being a cheap and tasty vegetable.

There are so many different uses for the common onion in cooking, my personal favourite is just fried onions with steak, or deep fried onion rings in a buttermilk batter. They flavour most sauces, soups and stews and many dishes, but here are a few of my favourite onion recipes.
