Be inspired to take action like 56 Central’s Gill Caroll

In 2016 after raising funds to build a new kitchen for a women’s residential service of the Galway Simon Community, 56 Central owner Gill Carroll saw first hand the impact this had on the women living in the house.

“Simply having a new space to cook brought a new energy to everyone. I was then blown away by Massimo Bottura’s Call to Action at Food on the Edge event in Galway and promised herself to expand the project this year,” she says .“Together with my Head Chef Vicky Donley at 56 Central we have developed a concept which they are rolling out in the coming weeks The Positive Placement Project. Vicky has devised a plan where she will take on clients from the Simon Community Youth Service to teach them a whole new world of cooking along with skills needed to join a work force.

“Our first challenge will be hosting a unique dinner party on this Saturday September 30 in 56 Central where under the guidance of Chef Vicky they will prepare a one off dinner party to help raise funds for the annual Sleep out for Simon which takes place on October 6 which myself and Aine our Marketing & PR Assistant will take on the challenge to sleep out on the streets for 12 hours.

Tickets can be purchased on Eventbrite and are €50 pp. The ticket will include a lavish three-course meal and wine sponsored by J&C Kenny. All proceeds from the night will go to Galway Simon Community Projects.
