Easy pancake recipes and tasty topping ideas

Pancake Tuesday happens this year on February 28. There are a million and one ways to make pancakes from the fluffy American style pancakes that require a thick batter to thin French style crepes made using a runny batter.

Traditional Pancake Recipe

This pancake recipe makes light, tasty pancakes that are easy to flip and eat!

Ingredients

225g flour

2tsp baking powder

1tsp sugar **optional for sweet pancakes**

2 eggs

250ml Milk

Method

I like to make my pancake batter the night before, but leaving it for at least an hour, to rest and thicken will help too. You can of course use it right away but the batter will be more runny.

Sift the flour, baking powder and sugar, if using, into a mixing bowl.

Add your milk and give it a quick mix with a whisk.

Add the two eggs and mix well.

Pour onto a hot greased pan or griddle and cook to your liking.

For an egg free version combine 150g Flour, 1 tsb bicarbonate soda, 250ml milk and 2 tbsp oil and for a gluten free version combine 150ml milk, 1 egg, 15g melted butter and 2 mashed bananas.

Don’t be afraid to experiment with the toppings. Many people stick to the traditional sugar and lemon, chocolate spread with marshmallows, bananas or berries and Maple syrup. But this pancake Tuesday how about trying out some savoury toppings like grated cheddar cheese and ham with spring onions or goats cheese and sundried tomatoes with olives? Add them after the first flip to make a great savoury tea for all the family.

Or how about turning your pancake into a calzone style pizza? Once your pancake has cooked on one side, flip it and add some sundried tomato paste or pesto as the base. Have a range of pizza style toppings ready and let each member of the family create their own pizza. When the toppings have been added, fold over the pancake and allow to heat through. Delicious!

You can also experiment with shapes. A great way to do this is to add the batter to a squeezy bottle. It helps if the batter is slightly thicker. Then ‘pipe’ your batter onto the greased griddle or pan in fun shapes. You can make letters, numbers or shapes that can be used together to create animals, flowers or other fun shapes.

To create a pig or bear pipe 2 small circles and one large circle. Once ready, cut one small circle in half for the ears and place the large circle on top, the remaining circle becomes the snout. Add blueberries or chocolate chips as eyes and to finish the snout.

For a flower or the sun use one large pancake and cut a strawberry into pieces lengthways Place pieces around the circle as petals. Use berries or chocolate chips to add eyes and a smile.

Or simply pipe your child’s name and let them decorate with sprinkles!
