McCambridge’s of Galway are teaming up with the Executive Directors of Sauvage Restaurant, Berlin for a Hunter Gatherer Feast this Good Friday as part of the Food Festival.
The menu on the evening will feature wild seafood and meats combined with foraged herbs, seaweed and seasonal vegetables using ancient preservation techniques. Instead of an a la carte format, the food will be served feast style with large tables being served an abundance of sharing plates.
Regarded widely as the pioneer of Paleo fine dining, Boris Leite-Poço channels the healing power of the Paleo diet while Rodrigo Leite-Poço is Sauvage's fermentation master and resident alchemist.
McCambridge’s will also be organizing two coffee cupping sessions with Jennifer Ryan from Pónaire coffee on the morning of Good Friday at 10.00 & 11.00. Much like a wine tasting Jennifer will go in depth into observing the tastes and aromas of brewed coffee, measuring the texture, sweetness, acidity and flavours.
