Sheridan’s launches new duck confit

Sheridan’s Cheesemongers has introduced a delicious new duck confit to its artisan range of foods. Expanding beyond its fantastic range of farmhouse and European cheeses, the duck confit is a welcome addition for fans of the quality Irish cheesemongers. Sheridan’s premier range also consists of a variety of wines, cured meats, pastas, and olive oils among other specialities for cooking and eating. Sheridan’s was awarded Food & Wine magazine’s Hall of Fame award alongside Richard Corrigan at the annual Food & Wine awards in August.

A speciality of Gascony, in France, duck confit is made using supreme duck leg. To give the duck a succulent and tender texture, the confit is prepared in an ancient process of preservation that involves salt curing the meat and then poaching it in its own fat. The result is a delicious combination of crispy and tender meat with an intense mouth-watering flavour. Sheridan’s has added its own unique twist to this popular dish by marinating the duck with a blend of coriander, star anise, cinnamon and pepper that infuses the meat beautifully for a mouth-watering finish.
