To create this chocolatey goodness all you need is 250g of white sugar, two eggs, two tablespoons vanilla extract, 95g white flour, 30g cocoa powder, 225g semi-sweet chocolate, and about 70g melted butter. Begin by preheating the oven to 180 degrees Celsius, and line your baking tin with parchment paper. While your oven is pre-heating, start chopping the chocolate into chunks and melt half of the chocolate in the microwave for about 20 seconds. Allow the melted chocolate to cool for a few minutes.

Follow by combining the melted butter and sugar in a large bowl, and then carefully beat in the eggs and vanilla extract. Continue mixing until the mixture becomes light and fluffy, which should take just two to three minutes, or quicker if mixed with an electric hand mixer. Slowly whisk in the cooled, melted, chocolate and sift in the flour and cocoa powder. Fold in the ingredients carefully, making sure not to overmix, to ensure extra fluffy and light brownies.

Last but not least, add a dash of salt and fold in the remaining chocolate chunks. Bake in the oven for around 20 to 25 minutes, depending on how fudgy you like your brownies.
