Serves: 4
Ingredients
40ml vegetable oil
1 garlic clove (sliced )
2 eggs (lightly beaten )
24 king prawns (shell off )
240g Chinese noodles
180g beansprouts
2 tsp sugar
3 tbsp soy sauce
Handful of coriander (chopped )
3 tbsp sweet chilli
1/2 lime (juice )
2 tbsp fish sauce (nam pla )
1/2 tsp chilli flakes
1 tbsp shrimp paste
Method
Heat the oil in a wok over a high heat. Add the garlic and prawns and stir fry for 3-4 minutes, then remove and set aside.
Add the egg and spread out around the wok to form an omelette shape, break up the egg into chunks, then set aside with the prawns and garlic.
Add the shrimp paste and chilli and stir-fry for 30 seconds, then add the noodles, bean sprouts, sugar, soy sauce, and fish sauce and stir-fry just long enough to warm everything through.
Return the egg and prawns to the wok and stir to combine.
To serve, divide evenly among bowls. Sprinkle with coriander and add a squeeze of lime.
Chef’s tip
This dish can also be served with fried rice. Prawns can be replaced with chicken, turkey, or beef strips.
