Cook along online with Little Lou Cooks
Cooking is many things to many people. Lou will admit it herself that she was not a great cook until she took herself off to GMIT to train as a chef at the age of 30. Under the guidance of the talented lecturers she learned to bake, make sauces, cook meat, fish, and vegetables. She then put it into practice in professional kitchens in Galway city for over a decade. Now her food is real, honest, home cooking. She shares her own recipes, with time saving tricks and handy tips to help cooks of all levels produce well balanced tasty food at home. She shares this knowledge with children and adults through her online cooking classes.

Cooke by name, cook by nature
The luxury four-star Hotel Meyrick has announced the appointment of Ultan Cooke to the role of head chef. With a background of Michellin star dining and high end brasserie, Ultan Cooke hails from Galway and studied at the National University of Ireland, Galway. He started his culinary training in Galway. He later moved to London where he worked for John Torode's Smiths of Smithfield, rising to head chef. He worked at Aniar in the period 2013-2015 where he was awarded a Michelin star.
A passion for flavour at the Connemara Sands
Fresh, local, organic, produce and a focus on flavour are the twin passions of executive head chef at the Connemara Sands, Reece Grehan. Since starting at the hotel earlier this year, he has moved the menu away from the fiddly foams and tiny portions of molecular gastronomy, and back to basics.
Adventurous dining at The Salthill Hotel
That the Salthill Hotel has only recently been awarded four star status came as a surprise to me. The lofty foyer and comfortable reception would not be out of place in Kensington. Any weddings or events I have attended there have always been to a very high standard. Overlooking the Promenade, with views of Galway Bay and the Clare Hills, this elegant hotel features an exceptional leisure centre. But the official announcement was granted by Fáilte Ireland, that the Salthill Hotel has achieved the four star status, only on February 12 2015. This accomplishment is testament to the hard work of the staff, coupled with the substantial investment by the Byrne family in the property in the last few years.
