Show your dad how much you care for him this Sunday and get into the kitchen to whisk him up some delicious food while he watches the TV. Here are a few simple snacks to keep the old man happy, which are surprisingly easy to make.

Homemade world’s thinnest pizza

Pizza is such a lovely snack, imagine how impressed your dad would be if you made his favourite pizza for him? Making a pizza base is not hard, but why not use a wrap or a flour tortilla as a base?

Then there is an endless variety of toppings that you can use, from basic margherita to a spicy chicken pizza. Here are a few examples of toppings, but you can use anything in the fridge.

Margherita pizza ingredients

Garlic butter

Chopped tomatoes

Grated cheese (mozzarella )

Basil leaves

Method

Set the oven to 190c. Spread the garlic butter on a flour tortilla, then add the chopped tomatoes. Put on some chopped basil leaves, top with the grated cheese (any cheese will do, but mozzarella is the nicest for pizzas )

Place the pizza on the middle shelf of the oven and cook for about five minutes, or until the bottom of the flour tortilla has browned and the cheese has melted on top, and there you have it. Take out of the oven and slice and serve with a beer or two.

Barbecue chicken pizza

Chef barbecue sauce

Cooked chicken

Chopped scallions

Chopped chilli

Grated cheese

Method

Spread the flour tortilla with the barbecue sauce, top with the rest of the ingredients and cook as the margherita pizza. Simple and delicious, and takes under 10 minutes to make and cook. Remember, you can use anything you want on these thin pizzas, so get inventing.

Quesadillas

Here is another easy recipe using flour tortillas that your dad is guaranteed to like on Father’s Day. It’s basically a hot chicken and cheese triangle, and I like to add a bit of Cajun spice to give it a kick.

Ingredients

1 cooked chicken breast chopped

Cajun spice

1 scallion chopped

100g grated cheddar cheese

2 flour tortillas (wraps )

Method

Top a flour tortilla with all the ingredients and put the other tortilla on top. Press down to hold it together and then microwave for about one minute. Put the quesadilla into a hot oven to brown (it takes about two minutes, but keep an eye on it ). Remove from the oven, and slice it into 12 triangles with a knife or a pizza cutter. You can change the filling to your own favourite, but the secret is to make sure that you use cheese to hold it all together when it melts.

BBQ chicken drumsticks

This is a little more adventurous recipe, but when you have all the ingredients together, it is a very simple, but tasty, dish to prepare.

Ingredients

12 medium skinless chicken drumsticks

2 garlic cloves, skinned and crushed

1 inch piece of fresh root ginger, peeled and grated

Finely grated zest of 2 limes

Juice of the 2 limes

1 small red chilli, finely chopped

2 tbsps clear honey

2 tbsps soy sauce

2 tbsps tomato puree

½ tbsps sesame oil

Method

Simply mix all the ingredients together except for the chicken drumsticks to make a spicy, sticky marinade. Put the drumsticks into a bowl and cover with the marinade, making sure that they are well coated. Leave them to marinate in the fridge overnight or for at least five hours.

Preheat your oven to 180C, put your marinated chicken onto a baking tray and cook for 20-30 minutes or until they are thoroughly cooked and golden brown. You can play around with this recipe; why not add your own secret ingredient and serve with plain boiled rice.
