Over 72 schools in Mayo have participated in a Meet the Spuds! challenge, where they all harvested the Colleen potato variety in an effort to create a greater appeal of the Irish potato in Mayo throughout the month of November.
The programme which is held in conjunction with Agri Aware and Sam Dennigan and Company, has also created a specially designed 2.5kg rooster potato pack with animated characters, which will outline the nutritional role of the spud as part of a balanced diet.
Recipes, culinary and growing information will be available in Dunnes stores in the county of Mayo in the latest drive to promote the potato for the United Nations 2008 International Year of the Potato.
