A very Georgian dining experience in Westport House

FOOD

Step back in time with a gorgeous Georgian dining experience at Westport House, Mayo every Saturday at 7pm until August 25.

Lords and Ladies are invited to gather in the Drawing Room of the stunning Westport House to feast on delicious and intriguing Georgian inspired dishes created by Wild Atlantic Way Food Champion, Chef Áine Maguire (The Idle Wall, Mayo; The British Ambassador’s Residence, Dublin; The Winding Stair, Dublin )

Áine has spent months researching, preparing, testing and tasting potential dishes, dipping into famous cookbooks such as Mr’s Beeton’s Book of Household Management.

With the help of Dr. Dorothy Cashman at the National Library of Ireland, the Westport House Dinner Books were unearthed in the Westport House Papers Collection and used to design the final menu, which will be served in the Drawing Room at Westport House, one of Ireland’s finest Estate Houses.

The stunning seven course tasting menu reflects the heritage and fancies of the era, what dinner might have looked and tasted like in the House in the 17th and 18th centuries.

Áine’s sumptuous offering is prepared using fresh, local, seasonal produce. There are many surprises along the way including: Hedgehog Soup – chicken broth with ground almonds, pomegranate and parsley, with an almond spiked bread ‘hedgehog’; Mutton and Oysters – slow cooked shoulder of Westport Lamb and baked oysters with cream, spinach and a breadcrumb crust and Jumbled Syllabub – a light lemon dessert with a sharp hibiscus flower syrup
