The Sheraton Athlone Hotel has come up with a new take on food combining - without any of the restrictive principles and days of planning that came with Dr Hay’s original theory from the 1930s!
Instead, they have devised a selection of fresh and unexpected pairings to stimulate the appetite. Imaginative combinations of ingredients mean that your tastebuds are in for a treat. Different dishes, such as Louisiana hot chicken wings, crispy celery, and Cashel Blue cheese are teamed with premium wines and craft beers - in this case, O’Hara’s Irish Red Ale.
Or how about a duo of sliders (mini-burgers ) - 100 per cent Irish beef and Cajun chicken in a sourdough bun with Irish Kinsale Pale Ale or a glass of Chilean Andes Peak Chardonnay?
Much thought has gone into the combinations on offer, and if you feel somewhat overloaded by seasonal fare, try a delicious cheese board with a trio of Irish cheeses, served with a bouquet of fruits and biscuits, paired with either a Chilean Karu Sauvignon Blanc or a Fleur Du Cap Cabernet Sauvignon.
There’s also a cold tapas platter served with Irish Kinsale Pale Ale or a glass of J Moreau Rose D’Anjou-Cabernet Franc, and a pairing of a Greek-style antepasto platter with a craft beer or Casablanca Valley Sauvignon Blanc.
