Chocolate biscuit cake
Makes 1 x 2lb loaf tin
Ingredients
400g Digestive biscuits
360g dark chocolate
85g butter
120ml cream
110g princess marshmallows
Method
Line a 2lb loaf tin with clingfilm. Place butter and cream in a saucepan over a low heat and bring to the boil. Remove from the heat and stir in the chocolate until it is all melted.
Place the biscuits in a large bowl and crush lightly with a rolling pin (make sure to leave them chunky ). Pour in the melted chocolate mixture and mix until combined, then add in the marshmallows.
Spoon into the prepared tin and leave in the fridge for at least four hours.
