Have your pancakes the healthier way

Pancake Tuesday is almost upon us - it’s time to get whisking and practise your flipping skills! Those watching their diet don’t have to avoid these traditional treats - make some good choices and they won’t ruin your healthy eating plans at all. Unislim have come up with this basic recipe (to serve 4 ) and some suggestions for healthy, delicious fillings.

These scrumptious pancakes are just two YUMS per serving (YUMS are treats allowed under the Unislim Food Maximising Plan ). The perfect reward for a taxing Tuesday - or any other day!

Ingredients:

1 egg

1 cup self-raising flour

1 cup skimmed milk

Pinch of sea salt

Toppings:

Low fat yogurt

Berries

Lime/lemon

Method:

Just crack one egg into a mixing bowl, add one cup of self-raising flour and one cup of skimmed milk (just use the same cup for easy measuring ) and a pinch of sea salt. Whisk it all together until you have a lovely smooth batter. Heat a medium non-stick frying pan and then use a ladle to spoon the batter on to the pan. Cook for 1-2 minutes, then use a spatula to turn them over.

When cooked on both sides, transfer to a plate and serve immediately with a dollop of low fat yogurt, some berries and wedges of lime or lemon to squeeze over. Yum yum!

Note: If you use wholemeal instead of self-raising flour you’ll get three times the fibre content and the low GI rating will help keep you fuller for longer.
