An air of optimism pervades the local hospitality industry this week, the recent public health easing of restrictions allowing for a return to normal trading hours.
The industry, which has been severely impacted by continuous restrictions since the onset of the pandemic in March 2020, can now look to pastures positive and a return to brisk trade to complement their culinary majesty.
Speaking to the Athlone Advertiser this week, Thyme proprietor, John Coffey, has noticed an upsurge in reservations as he and his staff welcome back customers to the atmospheric surrounds of the award winning restaurant.
“While we remain cautious with regard to a complete return to our pre-Covid-19 restaurant operations, it is a boost to see our reservation numbers increase upon the news announced on Friday,” John enthused.
The government’s decision to swiftly eradicate the public health restrictions within the hospitality industry “caught the team and me by surprise” but it was a much welcome announcement.
“You can feel an air of optimism, one which has not been too prevalent this past two years. However, it would be remiss to look too forward into the future and just focus on the now as we reopen with confidence and welcome back customers - new and familiar - to our restaurant.
“I do believe that there is a true appetite to dine out and this has been reflected in the rise in restaurant reservations,” John commented.
Thyme was closed for approximately 12-14 months during the pandemic and the perennially popular restaurant, when it was permitted to open, adapted to the relevant restrictions imposed.
“Our customers were very understanding with regard to the recent 8pm closure, but there was that added pressure amongst staff to adhere to the regulations imposed.
“Now that we are returning to normal trading hours, it will allow our customers to feel more relaxed as they dine,” John commented.
Eagerly anticipating a return to full-time chef mode, John complimented the staff of the restaurant for their commitment during the pandemic, noting that they are “an extension of my family”.
