Continue the Mothers Day flavoursome food journey with this flavour infused meal comprising pork with apple, ginger and sage. A delight on the tastebuds and certain to be a favourite with mothers as she avails of a day of pure relaxation and being waited upon, particularly at meal times!
The apple and ginger are a winning combination and give the pork chops a serious mouth watering flavour. Served alongside colcannon and roast vegetables this dish is the perfect Mothers Day evening meal, so don the apron in advance.
The meal serves four and requires a cooking time of 45 minutes.
Ingredients
One tablespoon oil
Four pork chops, well trimmed
Salt and black pepper
Two eating apples, peeled, cored and sliced
Juice of half a lemon
One tablespoon honey
Two teaspoons fresh root ginger, grated
Four sage leaves, chopped
A few knobs of butter

Colcannon and roasted parsnips and carrots.
To Cook
Preheat the oven to Gas Mark 4, 180?C (350?F ).
Heat the oil in a frying pan. Season the chops with salt and pepper and add them to the pan. Brown for two minutes on each side then remove from the pan to an oven proof baking dish. Add a knob of butter to the same frying pan, add the apple slices and cook for a minute. Mix the lemon juice, honey, ginger and sage together in a small bowl then add it to the frying pan. Simmer for a minute or two, then pour over and around the pork chops. Cover the dish and place in the preheated oven for 40 minutes.
