This exciting collaboration takes a classic Italian meat sauce, Bolognese, teams it with Irish artisan and foraged ingredients and reimagines it as a glorious pizza, the JP McMahon x The Dough Bros Bolognese Pizza. This specially crafted pizza features Bolognese sauce with slow-cooked fennel sausage, smoked Gubbeen cheese béchamel sauce from West Cork, foraged and pickled wild ramsons, cold-pressed Irish rapeseed oil, and sprinkled with Achill Island sea salt.JP McMahon first experienced a Bolognese dish in the 1980s at Chez Hans in Tipperary—an influential moment he credits in his book, An Irish Food Story, as the beginning of his culinary journey. Jp, says, “Bolognese sauce has a special place in my heart. From the very first time I had it when I was young, it retains a magical aspect in my culinary imagination. My earliest memory of Jim was of him building his house near us in Salthill. He had a small corrugated iron shed he lived in while working there. We local working men, all of us about six or seven years old, decided he needed a hand, so we went to “help” him, moving sand and mixing cement, etc. We were obviously a complete distraction and a nuisance but he was a gentle man. He would sit us down beside his shed, give us a slice of bread and jam, and then frighten the life out of us telling us ghost stories. A very nice way of getting rid of us at the same time as vastly improving the efficiency level of the amount of work being done on site.
