Kilkenny native Neil McEvoy was recently appointed as Head Chef of Stathams Bar and Restaurant at the Pembroke Hotel.
A former winner of the prestigious Euro-Toques Young Chef of the Year award, Neil has a wealth of national and international experience. Passionate about using local produce in season, freshly prepared with great care and flair, he has developed a range of exciting new menus at Stathams, which are currently going down a treat with the restaurant’s clientele.
And especially for St Patrick’s Day this week, Neil has created a new and creative recipe taking a traditional Irish dish and turning it into a contemporary and modern classic — bacon and cabbage terrain. The dish is served cold as a starter.
Originally from Piltown, Co Kilkenny, Neil was formerly head chef at Kevin Dundon’s Dunbrody Country House, where he also presented cookery demonstrations at its renowned cookery school.
Neil previously worked in a number of Michelin starred Irish restaurants including L’Ecrivain and Restaurant Patrick Guilbaud in Dublin.
